Description

A creamy and comforting frozen nougat log dessert, reminiscent of childhood memories, featuring crunchy pistachios and toasted almonds.


Ingredients

  • 150 g de pistaches
  • 125 g d’amandes
  • 100 g de sucre
  • 2 blancs d’œufs
  • 200 ml de crème fraîche
  • 1 sachet de vanille
  • 1 pincée de sel

Instructions

  1. Start by toasting the pistachios and almonds in a medium skillet over medium heat, watching carefully to avoid burning. Once fragrant, remove from heat and let cool.
  2. In a large bowl, beat the egg whites with a pinch of salt until stiff peaks form; the whites should be glossy and firm.
  3. In a separate saucepan, heat sugar with a bit of water to create a syrup. Once syrupy, slowly incorporate it into the egg whites while mixing.
  4. Gently fold in the whipped cream to the egg mixture, then add the toasted pistachios and almonds, taking care not to deflate the mixture.
  5. Pour the mixture into a cake mold and freeze for at least 4 hours, preferably overnight.
  6. To serve, unmold onto a presentation plate and slice with a warm knife. Enjoy chilled, optionally with whipped cream or melted chocolate.

Notes

Ensure ingredients are at room temperature for easier mixing. Toast nuts slowly for the best flavor.
