Description

A comforting and savory dish that celebrates family cooking with tender chicken thighs and drumsticks, complemented by apples, garlic, and shallots.


Ingredients

  • 900 grams of chicken thighs and drumsticks
  • 4 shallots, chopped
  • 1 tablespoon of olive oil
  • 1 celery stalk, diced
  • 4 to 5 sprigs of fresh thyme
  • 2 cloves of garlic, crushed
  • 2 tablespoons of flour
  • 1/3 cup of chicken broth
  • 1.5 cups of vegetable broth
  • 2 apples, quartered
  • 1/2 cup of crème fraîche
  • 1 teaspoon of diluted apple cider vinegar (200 ml of water)

Instructions

  1. Preheat the oven to 175°C (350°F). Pat the chicken pieces dry with paper towels and generously season with salt. Heat the olive oil in a large skillet over medium heat and brown the chicken on all sides for about 5 to 7 minutes. Remove the chicken and set aside.
  2. In the same skillet, add the shallots, celery, garlic, and thyme. Cook until the vegetables are tender, about 4 to 5 minutes. Sprinkle flour over the vegetables and stir well, cooking for another 1 to 2 minutes.
  3. Add the chicken broth and vegetable broth to the skillet, stirring to deglaze and dissolve any brown bits. Return the chicken to the skillet, cover, and bake for 30 minutes. Remove the cover and bake for another 30 minutes until the chicken is golden brown. Caramelize the apple quarters in a separate skillet during the last 10 minutes before adding them to the sauce with the crème fraîche.

Notes

For juicier chicken, prefer thighs with skin. Use sweet-tart apple varieties like Gala or Granny Smith for balance.
